Bella has always been a picky eater, and one of her favorites as well as ours is Yiayia's baked macaroni & cheese!
- 2 Cups Elbow Macaroni
- 2 Cups Milk
- 1 Cup Heavy Cream
- 1 Small Onion
- 1/2 Stick Butter
- 3 Tablespoons Flour
- 2 Cups Shredded Sharp Cheddar Cheese
- 4 to 6 Slices American Cheese
Serves 6-8 people. ( Unless you're a Kreticos)
Start by pre-heating the oven to 350 degrees. Boil 2 cups dry elbow macaroni ( Or substitute for your choice of pasta) to al-dente.
To make the creamy and cheesy base, start with one small onion. Caramelize the onion with 1/2 stick butter or margarine. Once caramelized, stir in 3 tablespoons of flour and add a dash of pepper and salt. Slowly begin mixing in 2 cups milk and 1 cup of heavy cream.
Stir consistently until thickened. Mix in 2 cups shredded sharp cheddar cheese and 4 to 6 slices of American cheese. Break up American cheese into smaller pieces to melt faster. Let the cheese completely melt before pouring.
Next pour the cheese mixture over noodles. Pour consistently to ensure macaroni is coated. Spread top smooth for a showy finish.
For topping, bread crumbs or Ritz Crackers may be used. Yiayia prefers Ritz.
Place inside oven and bake for 10-15 minutes.
Serve to your family, friends, and loved ones!
