Yiayia’s 7-Up Cake

Serves 8-12 people

Ingredients

  • 1 ½ Cups Margarine OR unsalted Butter

  • 3 Cups Sugar

  • 5 eggs

  • 3 Cups Flour

  • 2 Tablespoon Lemon Extract

  • ¾ Cup 7 Up

Preparation

  1. Mix sugar and Margarine (or bitter) together. Beat until light and fluffy.

  2. Add eggs one at a time. Beat with a blender after each egg.

  3. Add flour and continue beating.

  4. Add lemon extract and 7-Up and continue beating till well blended.

  5. Mix contents into a well greased Bundt pan.

  6. Bake at 325 for 1- ¼ hours. Check with a knife to make sure it is thoroughly cooked.

Tips

Sprinkle confectioners (powder) sugar on top for extra pizazz!
